Last night I put together my grocery shopping list as I plan to go to the store today. When I woke up I see that the ground was wet and that humidity smell was in the air. It must of rained early in the morning. My laziness mode kicked in and the thought of going to the store dissipate. I pop the fridge open and looked through what was still there. To my surprise the fridge was pretty full but mostly with veggies. I guess because I’ve been cooking with things from the freezer that when it was empty I automatically think that I need to re-stock. So with the veggies I found I was able to put together a quick & simple (another version) of tropical salad. This version isn’t as bright as the Tropical Citrus Salad that I had post on my Youtube Channel but the dressing is the same. I took some short cut by using store bought Dried Fruit & Nut Medley. The salad was top off with crumble blue cheese.
Once lunch was taken care I had to start thinking about dinner menu early just in case I do need to go grocery shopping today. Luckily there was a pack of frozen pork with bones in the back of the freezer.
Still don’t have a dish in mind yet I pulled it out and defrost it. Moments later I dump it in a pot of boiling water and cook it til the meat fell off the bone. By that some soup possibility came in to play and I was able to put together a Pulled Pork Spinach & Mushroom Soup. And to accommodate the bland soup I also made Chinese Broccoli with Oyster Sauce and Grill Lil’ Beef Smokies.
