Stock Up Day

Had to stop by Costco to return some stuff and pick up some frozen chicken thighs and delicious juicy seedless watermelon.  I used to get those individually wrapped chicken thighs but I don’t  like to spend time removing the skin or pulling the bones out so I just stick with the Foster Farm frozen, skinless, boneless chicken thighs. It saves me time when I cook.  Next was a stop to the Asian grocery store. I kept in-tuned with my check list that I had made a few days back and I’m very glad I did so, well with regards to only a couple of items that I miss such as the whole peppercorn and the oyster sauce. You can never have too many bottles of oyster sauce right? :)

I think I grew up watching the Food Network too much. My parent always comment  me and my sister that we always watch that channel but yet we never made anything for them to try LOL oOops! True, but I mostly watch for the tips and techniques which I’m able to carry on up til this day. Once I returned from the store I took the time to stock everything and wash, clean, dry and pack all my herbs so they are ready to go when I need them. Thanks to Rachel Ray’s Show for that oh and Sandra Lee Semi-Homemade as well!  Cooking is fun but prepping and cleaning is not. So, with the fridge, freezer and pantry all filled I was ready to try some new recipe for dinner.

It’s called Cotton Fish because the meat is pick from the cooked fish, mash in a mortar & pestle and then deep-fried again. As the fish meat is cook, it poof up to the top and resemble cottons? I got the recipe from ImportFood.com. I only took their ingredients and technique but played with my own measurements. My thoughts? It was crunchy.  Didn’t take much time as I had help from the store by having them deep-fried the fish whole once already. I had it with rice but find that it taste much better on it’s own.  It was fun putting this dish together.

Next I move on to my dessert – Banana Roti. I’ve been wanting to try this recipe for awhile now since I saw the picture in a cookbook that I had purchase.  It was featured under  the “Street Food” so there was no recipe but with the help of Google I was able to get some idea.  This is a semi-homemade version because I got the already prepared Puff Paratha from the store for $1.39 per a pkg of 5 . :) There was so many different flavors but I selected the Original/Plain one since I’ll be adding stuff to that. By Googling I can see that there’s many recipes I can try using this Puff Paratha from breakfast, dinner to desserts like my Banana Roti filled with condense milk.
It was super D-E-L-I-C-I-O-U-S !!!
