Last night as I was browsing the net trying to gather ideas for next week menu I stumble across many blogs and websites that feature lots of great food photography, recipes and tips. It helps to have a menu in mind before going to the grocery store because it will help guide me to things I need to buy while I’m there. One of the tips mentioned deals with deep frying. Several sites I visited indicates that the secret ingredient to a crispy outer layer is rice flour. Not so secret any more eh?
So this evening I’m going to try making Fried Chicken using the rice flour as mentioned for dinner. While in the kitchen I glanced and saw the last banana sitting and immediately thought of fried banana. And the result? Ta-da!
Coconut Fried Banana with Ice Cream (1-2 servings)

Ingredients
1 tablespoon all purpose flour
1 tablespoon corn starch
1 tablespoon rice flour
1 teaspoon coconut cream powder (optional)
1 banana, thickly slice (unripe banana works best)
oil for frying – amount will vary depending on what you use to fry
ice cream (optional)
caramel (optional)
Method:
Combine flour, corn starch, rice flour and coconut cream powder (if using) in a bowl.
Slice banana thickly and coat with the flour mixture. Dust off excess.
Tip: After coating, I dump it all into a strainer and shake it off. This will allow majority of the flour to sift through the strainer leaving me with the lightly coated banana slices.
Heat oil, when hot and ready add flour coated banana slices and cook on both side til brown. Transfer to paper towel to drain excess oil.
Serve hot or cold with your favorite ice cream and toppings.
