Shrimp and Egg Cake

When I’m at a Vietnamese Restaurant and ordering a rice plate, I sometime get the one that include what they called “egg cake”. Many times I tried it but never really thought about trying to make it at home. Maybe because I don’t know how to work my gas oven, or maybe because baking is not something I do often so it doesn’t cross my mind. Well since my Mother got me an electric grill I had cleaned my old little toaster oven and set it aside. Usually I just use the broil setting to cook my meat, but now I get to test out the bake setting. I was frustrated at first because I didn’t see the light. I even rolled up a napkin and place it directly on the bulb, :?: it burned so I just continued on with my baking. I think it took longer than it suppose to (1hr instead of 30mins) but I’m glad it worked out. I just have to plan ahead the next time I want to bake anything.

I had some shrimps sitting around in the fridge so I just chop ‘em up and toss it in there along with the ground pork, green onions, wood ear mushrooms, mung bean noodles, and eggs. The results? A nice and yummy Shrimp & Egg cake.
