Lotus Root Salad

I popped the freezer opened and notice that the only thing left was a half bag of frozen shrimp. On the bottom fridge there was some veggies that was or about to go bad so I quickly got rid of them because tomorrow it’s garbage day. :) What was left were some lotus root in brine left over from making the Vietnamese Hot & Sour Soup the other night. My BFF was talking about lotus root salad awhile back or maybe it was Banana Blossom Salad? Mrs., please clarify :)   Well, this is a great time for me to test it out. To my surprised, I really enjoy the taste of this Lotus Root Salad. Although I went a little over with the sugar but that is adjustable – next time. :mrgreen:

Lotus Root Salad

Lotus Root Salad

Ingredients
1 cup lotus root in brine, cut into thin matchstick
1/2 carrot, shredded
1/4 red onion, thinly sliced
1 pickled jalapenos, chopped (fresh chili can also be used or leave out completely if you don’t like spicy)
2 cloves garlic, chopped
15 cooked shrimp, halves
vinaigrette (made with fish sauce, lime juice & sugar)
5-6 mint leaves, chopped (reserve some for garnish)
1 tablespoon crush roasted peanuts

In a large bowl, combine first 6 ingredients and pour vinaigrette, mix well. Add mint leaves and arrange on a plate to serve. Sprinkle with crush peanuts and garnish with reserved mint leaves.

    Ohhh T it’s picture perfect, sa’art jeang pics nov restaurant theat … it looks so delicious. I’ve only had it in salaw and will have to try this soon. Did you had it with just rice or other meat? As for the lotus roots or banana blossoms .. it was both, lolz.

  • Same here, this is my very first having it as a Salad. It was G-O-O-D. If only I had some pork or chicken to add, it would even be better. I had this salad along with some store-bought sausage, and even made the Korean Onion Pancake (for the first time) as a back-up. I got the recipe from watching Youtube. But it turned out that the Pancake was better of eaten alone, not with steam rice. Oh well. =)

    Cool! I’m going to have to try out this recipe. I’ve also made some somlaw machoo youn like 2 weeks ago and have some left over lotus roots in a jar in my fridge. Good thing I have all of the ingredients you’ve listed.
