Boiled Peanuts

I checked out our local Farmer’s Market Sunday morning and bought lots of fruits and veggies for just $10! WOW The Farmer’s Market seems to me like the 99 cent store for fresh fruits and veggies. Some stuff cost even less depending on the quantities. For example, I got lots of Thai bird’s eye chili for only 60 cents! These stuff freeze well so it’s good to stock up while it’s abundance and use later in the winter. Well, another item that I happened to purchase was these raw peanuts. I’ve eaten boiled peanuts before but not as often as roasted ones. Since these raw ones are not only fresh but affordable as well. There were tons of vendors selling them. It’s probably in season right now? I thought I get some and try boiling them myself.

The results? Tasty! :D I like it. So easy to cook, fun and delicious to eat. I only purchase one pound to test it out and it looks like I will be getting a lot more the next time. These can keep for awhile in the fridge. Great snack to enjoy which watching a movie. Healthier than popcorn? It seems like it.

Ingredients
1 lb raw peanuts
2 tablespoons star anise
1 tablespoon salt
1 teaspoon sugar (optional)
4 cups of water

Method:
Rinse raw peanuts thoroughly.  In a pot, add all ingredients and bring to a boil. Allow to boil for about 10 minutes  then cover and let it simmer on low-med heat for about an hour. You can check every 20 minutes or so as the time will vary depending on the peanuts.

As with many of my recipes, the measurements are provided as a guide. You should always taste and adjust according to your preference. With that said, if you prefer a more salty boiled, then add more salt.

Once the peanuts are cook, if you are not in a hurry to eat them you can turn the heat off and let it sit in there for an additional hour or so. But if you are going to dig into them right away then be sure to rinse it off with cold water until it’s cool to the touch.

    i usually boil them w/ sugar and salt. i am going to have to try star anise next time! looks great! my parents and i love eating this when watching chinese series. lol.
